Dandelion 'Honey'

Have you ever heard of dandelion honey? It's a vegan alternative to honey that's made from dandelion flowers and it's so fun to make!

All you need is: fresh dandelion flowers, sugar, lemons and water!

When foraging remember these important guidelines

Leave plenty of flowers behind for the bees and other pollinators!

Choose a clean and unpolluted area to gather from

Make sure you have correctly identifed what you are foraging

Place the water, lemon slices and dandelion flowers in a saucepan and simmer with a lid on for 15 minutes. Leave to infuse overnight.

The next day, strain out the flowers and lemon by pouring the liquid through a strainer or muslin cloth.

Measure your strained liquid and weigh an equal amount of sugar. Put the liquid back in the pan and add the sugar.

Stir and heat gently at first until the sugar is dissolved. Then bring it up to a gentle boil for approximately 15 minutes.

You can test the set by  spooning some onto a cold plate from the freezer and seeing how thick it is.

Pour into a sterilized jar and enjoy your vegan honey!
