3 ¼ cups (400 g) cooking apples (sliced for applesauce)
¾ cup (100 g) extra apples diced
½ cup (100 g) caster sugar
2 tsp baking soda
⅓ cup (80 ml) vegetable oil
1 ¾ cup (225 g) wholemeal / wholewheat flour
½ tsp cinnamon
½ tsp mixed spice or pumpkin spice
Slice apples into thin slices (approx 2mm), lay the slices on a well greased or parchment lined baking tray and sprinkle on the spices. We use 1 tsp of spices per tray.

Bake at 280°F / 140°C for 45mins, turning the slices over after 20mins.Some variety of apples might simply take longer to cook, if after 45mins they are still moist, give them more time.Leave to cool in the oven and enjoy!
