Ingredients
1tbspolive oil
1onionfinely diced
2clovesgarlicminced
3sticksceleryfinely diced
5medium(280g / 10 oz)carrotshalved lengthwise and finely sliced
4cups(960ml)vegetable stock
Instructions
In a large stockpot, heat olive oil on medium heat.
Add the onions and saute for 5 minutes until soft.
Add the garlic and saute for 2 more minutes on low heat.
Add carrot and celery, and fry on medium-high heat for 5 minutes.
Add vegetable stock, bring to a simmer and cook for 5 minutes or until vegetables are tender.
Optional: Add finely chopped celery greens or parsley before serving.
Notes
