Ingredients
2tbspolive oil
1onionfinely diced
10sticks(400g / 14 oz)celeryfinely sliced
3clovesgarlic minced
3medium(300g / 10oz)potatoesdiced in ½ inch (1.5 cm) cubes
4cups(960ml)vegetable stock
1pinchnutmegoptional
black pepperground, for seasoning
Instructions
Heat the olive oil in a medium pan over medium to medium-high heat. Add the diced onion and sliced celery and saute for about 5 minutes, until the onions are translucent.
Add the minced garlic and continue to saute for another 1-2 minutes.
Add potatoes, vegetable stock and, if using, ground nutmeg, and cook for around 10 minutes, until the potatoes are tender.
With an immersion blender, puree the soup until smooth.
Season the soup with black pepper to taste. Bowl up and garnish with chopped fresh parsley. Serve with a slice of fresh bread or toast.
