Check the ingredients on your can of sweetcorn. If it already contains salt, you don't need to add any extra.
Simply combine all ingredients in a bowl to form a uniform mixture.
Heat up a bit of olive oil in a pan.
Add some mixture into the pan and press it flat.
Fry on both sides until crisp (~2x2 min) and repeat for the rest of the mixture.
Sizes of sweetcorn can and their amount of liquid can vary, so if you find you haven't got enough liquid from just the can, add a little water too. Or, if you have too much liquid then add a bit more flour! You are aiming for a thick sticky batter that coats the sweetcorn kernels.Our vegan sweetcorn fritters go great with sauce.
