Instructions
Dice the mangoes, removing the skin and stone. Wash and dice the bell pepper and cucumber, slice the onion, and chop the fresh cilantro.
Combine the diced mangoes, diced red bell pepper, diced cucumber, sliced red onion, and chopped cilantro / coriander leaves in a large bowl.
Make the dressing - In a separate small bowl, whisk together the lime juice, olive oil, maple syrup, grated ginger, salt, and optional chopped red chili to create the dressing.
Pour the dressing over the mango mixture and gently toss until all the ingredients are well coated.
