    Vegan Granola

    Start your day the easy and delicious way with a bowl of crunchy and nutty vegan granola. This homemade granola recipe is so versatile and simple.

    We’ve been making granola at home for over 5 years. Countless boxes have been happily emptied and quickly refilled. When we’ve hosted guests on Airbnb, so many reviews raved about the granola, that's how much of an impression it made!

    The recipe is so simple that after a while you’ll be able to remember it by heart, and mix up a fresh batch in just 5 minutes. 

    Is granola vegan?

    Can vegans eat granola? Sure they can, but not all granola is vegan. Many commercial brands of granola contain honey as a sweetener, which is not vegan, Other granola recipes may use other animal ingredients such as butter or have add-ins such as chocolate chips with dairy in them. But it is really easy to make your own delicious vegan granola at home!

    Why make homemade granola? 

    Well, because it’s so easy and tasty of course! But the other thing we love about making our own granola at home is that you can choose exactly what goes in it. 

    You can use all organic ingredients, or opt for more budget friendly options. Don’t like walnuts, but love pecans - that’s easy! Want to add a touch of spice, dried fruit, chocolate chips - do it! The options are limitless when you make your own granola…

    Our recipe will show you the basic process and proportions, but we encourage you to vary, adapt and enjoy this recipe to your heart's content!

    The ingredients for vegan granola: Rolled oats, nuts, mixed seeds and nuts, coconut oil and maple syrup.

    Ingredient tips

    The base of granola is oats. We use rolled oats, also known as old fashioned oats. Jumbo oats are also good. 

    Then you have the nuts and seeds. For the granola picture we used a combination of flaked almonds, coconut flakes, pecans and pumpkin seeds. We like to buy our organic nuts in bulk for better value. 

    To bake the granola we use melted coconut oil. We love the taste of organic unrefined or extra virgin coconut oil in this recipe, but another oil such as light olive oil, a neutral canola or sunflower oil can also be used. 

    And as a sweetener we like maple syrup the best - we order 1L jugs online so it’s not so expensive. You could also use another liquid sweetener such as date or agave syrup. 

    Step by step pictures

    Let’s show you how to make vegan granola! (You'll find the amounts and printable recipe in the card below). It’s easy and quick.

    Step 1 - First, melt the coconut oil. We usually do this in a heatproof jug in the microwave in 30 second intervals, but you can also melt it gently on low heat in a saucepan.

    Step 2 - In a large bowl, combine all the ingredients and mix together.

    Step 3 - Transfer to a large lined baking tray, spread out and press down the mixture.

    Step 4 - Bake at 160C / 320F for 30 minutes or until golden brown. Stir once after 15 minutes.

    Step 5 - Remove from the oven and leave to cool on the baking tray. 

    If you like clusters in your granola, you can try this method: Don’t stir it halfway through, leave to cool on the tray, then break up with your hands into chunks. 

    Variations

    Want a change from oats? For some variety you can substitute some or all of the oats with other types of flakes, such as barley flakes, rye flakes or quinoa flakes. 

    For a gluten free granola, be sure to use gluten free certified oats. 

    Want to make a fruity vegan granola? After the granola has come out of the oven simply stir in ¾ cup or 100g dried fruit. Chop larger fruit into smaller pieces. You could use dried apricots, cranberries, raisins, wild blueberries, dried apple… 

    Fancy some vegan chocolate granola? Add 35g or ⅓ cup cocoa powder to the mixture before baking. And after the granola has cooled, stir in 80g or ½ cup vegan chocolate chips or chopped chocolate.

    Serving and storage

    When cool, transfer your granola into an airtight container. It will keep well for up to a month, but ours always gets eaten up quicker!

    We like to enjoy our homemade granola for breakfast with some fresh fruit and vegan yoghurt or plant milk. 

    For more ways to use your vegan granola try these ideas:

    • Sprinkle it on top of porridge with some chia jam. 
    • Combine with some baked or grilled fruit for an easy dessert.
    • Use as a crunchy topping to our chocolate nice cream.
    • Make a no bake berry crisp or apple crumble when you are camping. Just cook the fruit in a pan, sweeten to taste, add some cinnamon, and then top with some granola! YUM!

    Easy Vegan Granola

    Ingredients
     

    • 4 cups (370 g) rolled oats
    • 2 cups (240 g) mixed nuts or seeds of your choice flaked almonds, coconut chips, pumpkin seeds, pecans...
    • ½ cup (110 g) coconut oil
    • ⅓ cup (110 g) maple syrup

    Instructions
     

    • Preheat your oven to 160°C / 320°F.
    • First, melt the coconut oil. We usually do this in a heatproof jug in the microwave in 30 second intervals, but you can also melt it gently on low heat in a saucepan.
      ½ cup (110 g) coconut oil
    • In a large bowl, combine all the ingredients - oats, your chosen nuts or seeds, maple syrup and the melted coconut oil.
      4 cups (370 g) rolled oats, 2 cups (240 g) mixed nuts or seeds of your choice, ⅓ cup (110 g) maple syrup
    • Transfer to a large lined baking tray, spread out and press down on the mixture with a spatula.
    • Bake for 30 minutes or until golden brown. Stir once after 15 minutes.
    • Remove from the oven and leave to cool on the baking tray. The granola will still be soft when it comes out of the oven, but crisps up as it cools.
    • Transfer to an airtight container for storage.

    Notes

    Nuts and seeds
    You can choose your own combination of nuts or seeds. Here we've used one of our favourite mixes: ½ cup each of flaked almonds, pumpkin seeds (pepitas), pecans and raw coconut flakes. You could also use: cashews, hazelnuts, walnuts, sunflower seeds, chia seeds...
    Oil
    We like the taste of organic unrefined coconut oil in this recipe, but another oil such as light olive oil, a neutral canola or sunflower oil can also be used. 

    Variations

    You can easily vary this recipe to suit you! Keep the basic proportions the same but tweak the ingredients to your tastes. You could add a tbsp cinnamon, 1 tsp vanilla extract or a pinch of salt. Here's a couple more ideas:
    Fruity vegan granola After the granola has come out of the oven simply stir in ¾ cup or 100g dried fruit. Chop larger fruit into smaller pieces. You could use dried apricots, cranberries, raisins, wild blueberries, dried apple… 
    Vegan chocolate granola Add 35g or ⅓ cup cocoa powder to the mixture before baking. For even more chocolateiness, after the granola has cooled, stir in 80g or ½ cup vegan chocolate chips or chopped chocolate. 
    Clusters If you like clusters in your granola, you can try this method: Don’t stir it halfway through, leave to cool on the tray, then break up with your hands into chunks.
