    Chickpeas on Toast with Stir Fried Greens

    Our chickpeas on toast with greens is healthy and delicious. It’s an easy dish that is ideal for a quick lunch, appetiser or camping meal.

    We think that our chickpeas on toast deserves to be a camping classic just like beans on toast. It’s so simple, protein packed and the added greens make it even more nutritious. We used Swiss chard this time, but spinach, kale or other leafy greens would work just as well.

    All you need is a tin of chickpeas, gram flour, paprika, cumin, soy sauce, lemon and some leafy greens. And some toast of course!

    Gram flour, also known as besan is made from dried chickpeas. It’s great for gluten free cooking, and is also the magic ingredient used to make vegan omelettes. In our chickpeas on toast recipe it works to coat the chickpeas and spread the flavour around. If you don’t have any you could try substituting plain flour, or just leave it out. You could also make up the gram flour and spice mix in advance if you are going camping.

    To make this easy chickpea recipe, simply drain and pat dry the chickpeas, mix them with the gram flour and spices and then fry in oil for a few minutes. Then add a good handful of washed and chopped greens along with a splash of soy sauce and lemon. Continue to fry for another couple of minutes until the greens are wilted. Serve on slices of toast - we especially like our chickpeas on some of our Super Seedy Sourdough.

    Chickpeas on Toast with Stir Fried Greens

    Our chickpeas on toast with greens is nutritious and delicious. All you need is 9 ingredients, one pan and 10 minutes.

    Ingredients
     

    • 1 can chickpeas
    • 1 tbsp gram flour
    • ½ tsp cumin
    • ½ tsp smoked paprika
    • 1 tbsp olive oil
    • 1 handful greens chard, spinach or kale
    • 1 tbsp soy sauce
    • ½ lemon
    • slices of toast

    Instructions
     

    • Drain the chickpeas, rinse and pat dry
    • Mix the chickpeas, gram flour, cumin and paprika.
    • Heat the olive oil in a frying pan, then add the chickpeas and fry on medium heat, for approximately 3 minutes, until they start to brown.
    • Wash and chop your greens, then add to the pan along with the soy sauce and a good squeeze of lemon
    • Continue to stir fry for a couple more minutes until the greens are wilted
    • Serve on slices of toast, with an extra squeeze of lemon on top.
