    Easy Vegan Yogurt Parfaits

    This vegan parfait recipe is so easy! Fresh berries, crunchy granola and vegan yogurt are layered to make a beautiful breakfast or healthy dessert.

    We love making these vegan breakfast parfaits for a delicious start to the day! It's a super easy recipe, but makes breakfast feel extra special.

    And when made with strawberries, raspberries and blueberries, these vegan yogurt parfaits make the perfect red, white and blue dessert for patriotic parties, the Fourth of July and other summer celebrations!

    The ingredients for vegan parfaits: Vegan Greek style yogurt, strawberries and blueberries, maple syrup, vanilla extract, sugar and vegan granola.

    Ingredient tips

    Dairy-free yogurt - There's lots of vegan yogurts available now at the grocery store. We prefer to use unsweetened vegan Greek yogurt for these breakfast parfaits. We like Greek style yogurt for its thick, creamy consistency and higher protein content. You can also use your favorite brand or other varieties of vegan yogurt if you prefer.

    Maple syrup and vanilla extract - To add some flavor and sweetness to our yogurt. If your yogurt is already flavored, you can leave these out.

    Fruits - We've used fresh strawberries and blueberries for the parfaits pictured. But this recipe is so easy to customise with any seasonal fruit - apricots, peaches, cherries, blackberries, raspberries, mango... be creative and enjoy what fresh fruits are available!

    You can also use defrosted frozen fruits which create an extra juicy parfait. You can even stir the fruit juices into the yogurt for more flavor.

    Sugar is optional. With not so ripe berries, we like to add a sprinkle of sugar to reduce their tartness. The sugar also helps make fruits juicier.

    Granola - We like to use our delicious homemade vegan granola recipe - we make a big batch of it every week. You can use storebought granola too - just watch out for honey and other non vegan ingredients.

    Step 1 - Dice the fruit and add an optional sprinkle of sugar.

    Syrup and vanilla extract mixed into the vegan yogurt.

    Step 2 - Combine the vegan yogurt with maple syrup and vanilla extract.

    In a glass, vegan yogurt, fresh fruit and granola are layered on top of one another.

    Step 3 - Fill a glass or mason jar with layers of the yogurt, fruit and granola.

    Variations

    The proportions in this recipe are just right for us, but if you like it extra fruity, or with lots of granola, then absolutely feel free to adjust the ratios of ingredients to your taste! 

    Here’s some more ideas on how you can customise your vegan parfait:

    • For a refreshing twist, add some lemon zest to the yogurt.
    • Add a teaspoon of cinnamon to the yogurt for a cosy fall parfait with blackberries or diced apple.
    • Add a sprinkle of chopped dark chocolate between the layers for extra indulgence.
    • You can also add a layer of nut butter or lemon curd. 
    • For a nutritional boost, you can add seeds such as pepitas / pumpkin seeds, sunflower seeds, hemp seeds, chia seeds or ground flaxseed meal. You can add these in with the granola.

    Serving and storage

    Enjoy immediately for an easy breakfast or delicious dessert! If not serving straight away, store in the fridge until you do. 

    Make-ahead parfaits. If you want to make these vegan parfaits in advance, we recommend adding the granola just before serving, or adding just one layer on top. This way it will still have a good crunch. Store in a glass jar for 2-3 days.

    Ingredients
     

    • 1 ½ cup (240 g) strawberries, blueberries or fruit of choice
    • 1 tsp sugar optional
    • 1 cup (240 g) vegan greek yogurt
    • 2 tsp maple syrup
    • ½ tsp vanilla extract
    • ½ cup (60 g) vegan granola

    Instructions
     

    • Dice the washed fruit and sprinkle with the optional sugar.
      1 ½ cup (240 g) strawberries, blueberries or fruit of choice, 1 tsp sugar
    • Combine yogurt with maple syrup and vanilla extract.
      1 cup (240 g) vegan greek yogurt, 2 tsp maple syrup, ½ tsp vanilla extract
    • In 2 glasses or jars, layer yogurt, fruit and granola.
      For each parfait we use two layers each of approximately:
      ¼ cup yogurt mix
      A heaped ¼ cup fruit
      2 tablespoons granola
      ½ cup (60 g) vegan granola
    • Enjoy immediately or store in the fridge for up to one day.

    Notes

    Sugar is optional, we recommend using it with not so ripe fruit to reduce tartness. The sugar also helps make fruits juicier.
    If using already flavored or sweetened yogurt, you can leave out the maple syrup and vanilla.
