    Mango Salad

    This delightful mango salad is juicy and simple to make! It has an irresistible lime dressing with vibrant ginger and red chili. It's a wonderfully refreshing side dish and you can have it ready in under 15 minutes.

    This colorful and fresh mango salad is a feast for both the eyes and the tastebuds!

    I love its zingy dressing and the combination of crunchy red pepper, cool cucumber and fresh herbs with the juicy mangoes. 

    Ingredient tips

    Here's everything you need to make this mango salad:

    Ingredients on a white background: mangoes, cucumber, bell pepper, red onion, ginger, lime. olive oil, cilantro/coriander leaves, maple syrup, red chili and salt.

    Mango: I've made this salad with both soft juicy mangoes and unripe green mangoes. Ripe mangoes can be diced into chunks (see here for a guide on how to cut a mango). If using unripe mangoes, you will have a less sweet salad and crunchier texture. I would recommend cutting unripe mangoes into thin strips which is typical in Thai cuisine. 

    Limes: Fresh lime juice will give the best flavor, but you could use bottled if you are in a pinch.

    Step 1 - Combine the diced mangoes, diced red bell pepper, diced cucumber, sliced red onion, and chopped cilantro / coriander leaves in a large bowl.

    Step 2 - In a separate small bowl, whisk together the lime juice, olive oil, maple syrup, grated ginger, and optional chopped red chili to create the dressing.

    Step 3 - Pour the dressing over the mango mixture and gently toss until all the ingredients are well coated.

    Substitutions and variations

    Herbs: Use mint or basil as a change from fresh cilantro / coriander leaves. Each has its own quality that it brings to the final dish. 

    Make it your own: 

    • Ripe avocado is an excellent addition.
    • Finely sliced raw zucchini / courgette is a great substitute for English cucumbers. 
    • Green onions / spring onions make a great alternative to red onion.
    • Instead of using fresh chili, you can add red pepper flakes / chilli flakes to the dressing to taste.
    • Add salad greens such as Cos lettuce or arugula / rocket. 
    • Add a can of drained black beans for a protein boost.

    Maybe you are in the mood for a more authentic Thai mango salad recipe? Then use unripe mangoes, skip the ginger and add soy sauce to make a more savoury dressing. You can also top the mango salad with crushed toasted peanuts.

    Serving

    Serve immediately or chill before eating for an even more refreshing dish on a hot day! 

    I find this is the perfect summer salad to go alongside a simple dish such as Breaded Tofu, Sticky Tempeh or Nut Burgers.

    It's also a brilliant dish to bring to a barbecue or summer party!

    Storage

    ​Store any leftovers in an airtight container in the refrigerator for up to two days. Though, with its irresistible taste, chances are it won't last that long!

    FAQs

    Can I use frozen mangoes?

    I don't recommend using mangoes that have been frozen, as their texture will be more soggy and wet. 

    Is the chili and ginger necessary?

    They both add a subtle kick, but feel free to omit them if you prefer a milder salad.

    Ingredients
     

    • 2 mangoes diced
    • 1 red bell pepper diced
    • ½ cucumber diced
    • 1 small red onion or shallot sliced
    • ¼ cup cilantro / coriander leaves chopped
    • 3 tablespoons (45 ml) lime juice
    • 2 tablespoons (30 ml) olive oil
    • 1 tablespoon (15 ml) maple syrup
    • 1 tsp fresh ginger grated
    • ¼ tsp salt
    • 1 small red chili optional (seeds removed and finely chopped)

    Instructions
     

    • Dice the mangoes, removing the skin and stone. Wash and dice the bell pepper and cucumber, slice the onion, and chop the fresh cilantro.

    • Pour the dressing over the mango mixture and gently toss until all the ingredients are well coated.
