In the UK, (where I am from) pancakes are traditionally eaten on Shrove Tuesday, also known as Pancake Day, as a way of using up ingredients such as milk and eggs before fasting for Lent. In other countries this day is known as Mardi Gras or Fat Tuesday and in Paul's homeland of Austria it's traditional to eat these jam doughnuts and not pancakes. We sometimes have both!
Traditionally, pancakes are made with milk, eggs and sometimes butter, but it's actually really easy to make vegan pancakes. Our recommendation is to follow a tried and tested vegan recipe, rather than substituting ingredients yourself as you'll get more reliable results. You'll find most recipes typically use flour and plant-based milk, and other ingredients such as baking powder, applesauce, banana, aquafaba or ground flaxseed. You can make any kind of vegan pancakes that you want, from flat vegan crepes, to fluffy American pancakes.
If you are having trouble with your pancakes sticking to the pan, the most common issue is that the griddle or pan you are using has not been adequately preheated or greased. This is why the first pancake often sticks more. Always be patient to heat up the surface before cooking and ideally use a dedicated non stick pancake pan or very well seasoned cast iron griddle for best results.
