    Grilled Apricots with Toasted Walnuts

    This two ingredient dessert is beautifully simple. Sweet and juicy grilled apricots bursting with flavour, combined with the crunch of tasty toasted walnuts.

    Apricots and Walnuts - the perfect match

    Where apricots grow, you can often find walnuts growing alongside them. There's something beautiful about combining them in a recipe, just like nature naturally pairs them together.

    Here in the Wachau, Austria, the trees are filled with orange gold fruits and the green husks of ripening nuts. This UNESCO world heritage valley along the Danube is home to the protected and beloved apricot variety the Wachauer Marille.

    There's such a good harvest this year, that there is an over abundance of fruit. We have spent the last few weeks collecting and rescuing apricots that would otherwise be wasted, and making delicious vegan delights!

    Now onto our super easy grilled apricot and walnut dessert!

    Grilling Apricots

    When you grill apricots, magic happens! Their flavour intensifies, they get super juicy and a delicious caramelised crust. If you haven't yet tried grilling fruit, then you absolutely should!

    You can grill them directly on a grill over a campire or barbeque. Or you can use a griddle pan on a hob. You'll know the apricots are ready when the skin has wrinkled and they are soft to the touch and juicy. The trick is to catch them before they go completely black!

    These grilled apricots would be gorgeous on top of oatmeal for breakfast, with a salad for lunch, or served with ice cream for a delicious summer dessert.

    Toasting Walnuts

    Toasting walnuts also transforms their flavour. It brings out more of their nuttiness and less of their slightly bitter taste. Simply toast in a pan over a medium heat and turn them regularly so they toast evenly. After a couple of minutes they will be browned, with a crispier texture. If you want even crunchier, sweeter nuts - then you can caramelise them with brown sugar like in our Vegan Chocolate Pots with Hazelnuts recipe.

    Grilled Apricots with Walnuts

    A super simple and natural dessert or snack. these grilled apricots are juicy and sweet and taste fantastic with toasted walnuts.

    Ingredients
     

    • 8 apricots small
    • 2 tbsp walnuts

    Instructions
     

    • Cut the apricots in half and remove the stones
    • Grill the apricots, inside down, on a grill over a barbeque, campfire or in a pan. Depending on the heat this can take from around 1 - 10 minutes. They will be ready when the skin is wrinkled, and you can feel that the texture has changed and is all juicy! If necessary, turn the apricots to stop them over cooking on one side.
    • Chop the walnuts and toast them in a small pan over medium heat. Turn frequently until golden brown.
    • Combine the apricots with the walnuts, serve and enjoy. Add some vegan ice cream for even more summer indulgence!

    Notes

    Fruit and nuts is such a good combo. Try grilling other fruits like peaches, pineapple, watermelon and combining them with other nuts like hazelnuts and almonds.
